Ingredients

  • 1 lb package dry pinto beans
  • 1 lb chorizo
  • 1 medium onion sliced
  • 2 garlic cloves chopped
  • 1 package Lipton Onion Soup Mix
  • 2 tsp dried ancho chili mild, medium, or hot ... your preference
  • 1 tsp cumin
  • 1 tsp salt
  • 5 cups water

Instructions

  • Clean, then soak the beans for 2 hours
  • Place the Instant Pot in "sear" mode
  • Brown the onions and chorizo in the pan. Normally, the Chorizo will provide enough grease. If not, you may need to add a TB or so of oil.
  • Add the garlic near the end of the browning.
  • When chorizo and onions are ready, add 1 cup of water, the contents of the onion soup package, the cumin, the chili powder, and the salt.
  • When the soup has been dissolved, add 4 more cups of water and the beans.
  • Put Instant Pot on bean/chili setting and set for 50 minutes (make sure pressure level is set to hold pressure).
  • Let the pressure drop naturally at the end of the cooking time.
